Backyard Treat

Jack and I sat outside on the deck today and ate Pine Bark while Max was napping. I made it the other night for our small group. He proudly exclaimed, "Mommy, this is a yummy backyard treat!" So, the next time you're looking for a "yummy backyard treat", try out this easy dessert! It may become one of your favorites...like it is Jack's!

Pine Bark
my own recipe, adapted from several others...

2 sleeves saltine crackers
1/2 pound butter (2 sticks)
3/4 cup sugar
2 cups chocolate chips
3/4 cup chopped pecans
cooking spray

Preheat oven to 425 degrees. Melt butter in small saucepan and add sugar. Bring mixture to a boil and boil for 3 minutes until mixture is thick and bubbly. Line jelly roll pan with aluminum foil and spray to coat with cooking spray. Place crackers salt side up on jelly roll pan. Pour butter/sugar mixture over crackers and spread to coat evenly. Bake at 425 degrees for 5 minutes. Remove from oven and sprinkle with chocolate chips. After chips have melted, spread to coat crackers evenly. Sprinkle evenly with chopped nuts. Refrigerate until hardened. To serve, remove from foil and break into pieces. Store in air tight container.

  2. Yumm!! I have a friend who makes this too, but instead of calling it "pine bark," they call it "fat." I like your name better, it doesn't make me feel as guilty since I can eat half the pan myself!

  3. my mom makes something similar to this too! it is sooo yummy. she renamed hers "to-die-fors" because they are to-die-for!
