Chicken and Rice Soup

Ahhh...comfort food.

My tummy wasn't cooperating today. So, I decided to make a pot of soup. It was the perfect dinner; light, easy, and comforting.


I'll be freezing the rest...it made a large pot. Next time I'm not feeling so great, I'll know just what to have for dinner!

Here's the recipe...

Chicken Rice Soup
my own recipe...

10 cups chicken stock
2 boneless, skinless chicken breasts
2 carrots, peeled and sliced
1 small onion, chopped
1 bay leaf
1 cup uncooked rice
freshly ground pepper

Pour chicken stock into medium stockpot. Add chicken, carrots, onion and bay leaf. Bring to a boil and simmer for 15 minutes. Remove chicken and dice. Return chicken to pot. Add rice and simmer, covered for 15-20 minutes until rice is tender. Remove bay leaf and serve with freshly ground pepper.

    My mother always said that she knew what gender of baby she was having by the intensity of her morning sickness.

    As you probably know, I was severly ill with Morgan. I'm pretty sure this last pregnancy was a boy b/c my morning sickness was a lot better than Morgan... definitely still sick, but less so.

    Hmmmmm... So how sick ARE you? :)

  3. Well, I've only been a little bit sick so far. We'll see how it goes over these next four weeks or so. And, yes, Rach...of course you can hope for a girl!
