Grilled Bacon and Cheese
I made these sandwiches for lunch today. They are really good, and have a lot of flavor. They're a nice change from everyday grilled cheese. Here's the recipe...
Grilled Bacon and Cheese
recipe slightly adapted from Southern Living Our Best Easy Weeknight Favorites...
1 cup shredded Mexican four cheese blend
1/8 cup mayonnaise
1 tablespoon prepared mustard
8 slices bacon
1 teaspoon parsley
4 slices sandwich bread
3 tablespoons butter, softened
Preheat oven to 400 degrees. Place bacon on baking sheet lined with aluminum foil. Bake until crispy, approximately 15 minutes. Drain on paper towels. Set aside. Mix cheese, mayonnaise, mustard, and parsley in small bowl. Spread cheese mixture evenly over all four slices of bread. Top two slices with bacon. Carefully place remaining slices on top. Spread half of butter on tops of sandwiches. Invert sandwiches onto a hot skillet or griddle, and cook over medium heat until browned. Spread remaining butter on ungrilled sides of sandwiches; turn and cook until brown. Yield: 2 sandwiches
