Jambalaya
I made Jambalaya for dinner tonight. I really like this recipe a lot because it's easy, and full of flavor. This recipe comes from a cookbook Jason gave me for Christmas called Dream Dinners. Each recipe in this cookbook can be made ahead and frozen. Instructions are included for tripling each batch, so that you can eat one batch that day, and freeze the other two for another night. This cookbook has allowed me to use my love of cooking to serve my friends by having meals on hand that I can take them whenever there's a need. Here's the recipe...
Crockpot Jambalaya
recipe slightly adapted from Dream Dinners, by Stephanie Allen and Tina Kuna...
6 (4 ounce) boneless, skinless chicken breasts, cut into thirds
1/2 pound turkey kielbasa, sliced on the diagonal into 2-inch pieces
1 (15 ounce can) diced tomatoes
1 cup red bell peppers, diced into 1-inch pieces
1/2 cup green bell peppers, diced into 1-inch pieces
1 cup yellow onion, diced into 1-inch pieces
1/2 cup chicken broth
1 tablespoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon cajun seasoning
1 teaspoon minced garlic
Combine all ingredients in crockpot. Cook on low for 6-7 hours. Serve over white rice.
