Vidalia Onion-Cheese Dip


This is one of my all-time favorite dip recipes. Wanna be the star at your next sports party? Take this dip!

This recipe is gooey, cheesy, sloppy and great with chips, fritos, or crackers! If you like sweet onions, you'll love this recipe, but even my friends who aren't big onion fans love this one, too.

I added a few things to give this recipe a little kick, but feel free to leave out any of the "hot" stuff. I love to serve individual sized portions of this dip in small ramekins if we're having a small party, or if we're gettin' our sports on, I bake it in a big ol' casserole dish.

Vidalia Onion-Cheese Dip
slightly adapted from Southern Living Homestyle Cooking...

3 large Vidalia onions, coarsely chopped
2 tablespoons butter
2 cups shredded Cheddar cheese
1/2 cup mayonnaise
1 clove garlic, minced
1/2 teaspoon hot sauce
1/4 teaspoon cayenne pepper
1/2 teaspoon freshly ground pepper

Melt butter in medium saucepan. Add onions and cook over medium-high heat, stirring constantly, until tender.

In a medium bowl, combine onion, cheese, mayonnaise, hot sauce, and garlic; stir well. Pour into a small sized lightly buttered casserole dish. Bake, uncovered at 375 degrees for 20-25 minutes or until bubbly and golden.

Serve dip with tortilla chips or assorted crackers.
