Chipotle Grilled Chicken Quesadillas


I made these quesadillas for dinner tonight. They were so simple to make and the combination of flavors was delicious. I love using McCormick Grill Mates - so easy and flavorful. I made these quesadillas entirely on our indoor grill pan (one pan=easy clean up=happy Sarah), but you could also use an outdoor grill. Next time I make these, I might try adding some grilled green and red peppers as well.

Chipotle Grilled Chicken Quesadillas
my own recipe...

4 boneless, skinless chicken breasts
1 packet McCormick Chipotle Pepper Grill Mates Marinade
1/4 cup oil
1/4 cup water
2 large vidalia onions, sliced
16 ounces Mexican blend cheese
8 (8-inch) flour tortillas
4 tablespoons butter, melted
sour cream, optional
salsa, optional

Combine chicken, marinade, oil, and water in gallon-sized bag. Allow to marinate in refrigerator for at least one hour.

Slice onion into rings. Heat grill/grill pan over medium-high heat. Place chicken and onions on grill and cook until juices in chicken run clear, and onions are translucent and caramelized. Transfer to cutting board. Slice chicken into strips and set aside.

Reduce heat on grill/grill pan to medium. Brush one tortilla with melted butter and place (butter side down) on grill. Top with cheese, grilled chicken, and onions. Brush another tortilla with butter and place on top. Grill for 5 minutes on each side, or until cheese is melted. Repeat with remaining tortillas, chicken, onions, and cheese.

With a pizza cutter, slice each quesadilla into triangles. Serve with sour cream and salsa, if desired.

Yield: 4 servings

  14. Quesadillas! Our favorite Sunday afternoon dinner after church. Sometimes with just chicken or peppers and onions. Jules' favorite- spinach and tomatoes! But then we get creative and use leftovers on our quesadillas. Like bbq chicken and parsley potatoes! This is Marc's favorite! Aren't quesadillas just plain fun?!
