Christmas Cookie #19: Cake Mix Cookies


We probably make these cookies more often than any others on this countdown. They are favorites in our house - the boys absolutely love them, Jason and I can eat an entire batch with anothe couple in one night (and have), and we have shared this recipe with so many friends that they've kind of become our "signature family cookie."

We have filled these with peanut butter (as pictured), chocolate icing, white icing, and ice cream. The kids love to roll the edges in sprinkles or mini-chocolate chips once they've been filled. If you try another filling, let me know! I'm always looking for new ways to change up these cookies.

Cake Mix Cookies
my own recipe...

One 18.25 ounce box chocolate cake mix
1/2 cup (1 stick) butter, softened
1 egg
3 tablespoons water
2 cups filling (peanut butter, icing, ice cream, etc.)

Preheat oven to 350 degrees. Combine all ingredients in medium bowl and beat with electric mixer until well combined.

Drop by spoonfuls onto ungreased cookie sheets and bake at 350 degrees for 9-12 minutes.

Allow to rest on cookie sheet for 2 minutes before moving to cooling rack. Cool.

Spread desired filling between two cookies and lightly press to form sandwiches. If making ice cream sandwiches, wrap each sandwich in plastic wrap and store in freezer. Remove 5 minutes before serving to allow ice cream to slightly soften.

  1. ok, so I made the meltaways and left some caramels out for some of my kids who dont like caramels....and I am thinking that it then became a cake mix cookie!They were good!

  2. ooooo that looks good!! we make a cookie similar to this at my house (can't remember right now exactly what is in it besides the cake mix) but i never thought of filling them!!!

  3. you know, your pictures over the past 19 days or so are exquisite. they really look professional and makes the reader want to go and try to make the cookie - because they want to EAT the cookie.

  4. Did you know you can make these with a brownie mix too? Soooo good. I can't remember if I told you this already, so if I did, just pretend I didn't. :) I made the caramel meltaways, but couldn't find caramels at Target. So, I used Rolos! Yummy! A little bit more chocolate (who couldn't use more of that!) and the caramel always stayed soft. Guess what I am making tomorrow for our Christmas tea? Your Thumbprint Cookies!!! Yay! Thank you!

  6. i am going through and copying down any of the cookie recipes i didn't get before christmas (ie avoiding cleaning the house today which must get done since we are hosting our small group tonight) and noticed i hadn't commented on this one.

    these remind me of whoopie pies - i can clearly remember the first time i had one. the student teacher for my grade class made them and brought them to class. i think our middles were either filled with white icing or marshmallow creme. i just remembered them being so yummy!
